Tequila can only be made in Mexico â itâs their world-famous gift to us, crafted from the hearts of blue weber agave. Australian Agave Spirit, though, is something new: distilled right here, with our own techniques freed from the shackles of tradition, reimagining the spirit and shaping new flavours and styles. Same plant family, but a whole different personality.Â
This October long weekend, Cauldron Distillery will unveil three new Australian Agave Spirits, each crafted with care, character and a distinctly local twist.
But first, what is an agave spirit? đż
Traditionally, agave is known for producing tequila and mezcal in Mexico. The plantâs heart (piña) is harvested and fermented, creating a spirit with earthy, vegetal, and sometimes spicy notes. In Australia, our creativity has given agave spirits a unique expression â vibrant, bold and perfectly suited to our lifestyle and climate.
At Cauldron, weâve taken this process one step further. Our Australian Agave Spirit is crafted entirely onsite in the stillhouse at Cauldron Distillery. We begin by carefully fermenting organic agave nectar, sourced from Mexico, with a specially selected yeast strain under precise pH and temperature control to develop vibrant flavours. The spirit is then skilfully distilled within strict parameters, ensuring only the purest, sweetest cut is captured for this exclusive release.
Hereâs whatâs coming to Cauldron:
âšÂ Australian Agave Spirit Blanco (Lime, Chilli & Saltbush)
A bold and zesty agave spirit with a lively kick of fresh chilli. Bright lime and green vegetal agave take centre stage, underpinned by a savoury twist of Australian Saltbush. Vibrant and complex, itâs equally enjoyable sipped neat or mixed into your favourite cocktail.
âšÂ Australian Agave Spirit Reposado
A rich, complex agave spirit delicately rested in American oak, adding depth and colour while preserving the fresh, green character of agave at its heart. Subtle layers of creamy caramel, soft vanilla and a whisper of cinnamon weave through the palate, creating a mellow, rounded finish. Crafted to be savoured neat in good company.
âšÂ CafĂ© Freddo Della Montagna (Limited Release Australian Agave Spirit)
A rich, full-bodied coffee liqueur crafted on a base of our Australian Agave Spirit, layered with exotic spices, dark chocolate, caramel and toffee. Organically grown coffee is cold-pressed to capture its depth and delicate sweetness, then subtly infused with fresh vanilla beans and cinnamon, and sweetened with organic rapadura sugar. Enjoy over ice, in an espresso martini, or poured over ice cream for a decadent affogato.
